Recipe: Spinach fritatta with feta cheese
Ingredients:
• 150 g feta cheese
• 70 ml of 2% milk
• 6 large eggs
• 2 cloves of garlic
• 25 oil
• 200 g fresh spinach
• 80 g shallots
• salt and pepper to taste.
Finely chop the onion and spinach, press the garlic. Heat the oil in a baking pan, sauté the onion and garlic, then add the spinach and fry for about 5 minutes.
In a bowl, crack the eggs, add spices, milk and mix thoroughly. Cut the feta into cubes, add to the spinach and pour the egg mixture. Cover the fritatta and stew for 2-3 minutes, then transfer it to a preheated oven to 180 degrees (fan) and bake for 8 minutes. After this time, remove the lid and bake for another 3-4 minutes.

Muffin recipe:
• 2 large ripe bananas
• 170 g wholemeal flour
• 1/4 teaspoon of baking soda
• 1 large egg
• 1/2 teaspoons baking powder
• 70 ml rapeseed oil
• 70 g walnuts
• 1 teaspoon cinnamon
Mash the banana with a fork. Mix the oil with the eggs, add flour, baking powder, baking soda and cinnamon. Add the banana and blend until smooth. Add the nuts to the mixture and use a spatula to mix gently. Put the mass into the molds and bake for 20 minutes at 200 degrees.
